Professional skills were demonstrated by meat boners
The Agroprodmash 2023 exhibition featured an annual Show of the Best Professional Meat Boners. The event was organised by the Gorbatov Federal Research Center for Food Systems and EXPOCENTRE AO.
The Meat Boners Show is an exciting and entertaining competition for meat processing plant specialists in the rational and efficient separation of pork cuts, speed, quality and cleanliness of boning. The event has run for several years at the Agroprodmash exhibition and gained popularity among industry professionals as a bright, unforgettable show and a great opportunity to test the level of meat boners in the tough, competitive conditions of the exhibition competition.
According to the assessment of the Gorbatov Federal Research Centre for Food Systems, most often enterprises implement automatic conveyor lines for meat boning and trimming, equipped with a modular conveyor, by means of which the meat is delivered to the cutting tables of operators for further processing. The quality of the final product, as well as the costs associated with the cleanliness of half carcasses, depend largely on the skills and experience of the meat boner.
