Bread Baking Academy holds masterclasses for industry experts
At the Agroprodmash 2023 exhibition, the stand of the Bread Baking Academy of the Russian State Research Institute of Baking Industry hosts daily masterclasses on bread baking.
The industry experts familiarise visitors with various aspects of bread production technology. Practical Solutions, Leaven and Autolyse as Tools for Improving the Quality and Expanding the Range of Bakery Products, Technological Aspects of Artisan Bread Production, Smart Food: Gluten-Free Products, Practical and Theoretical Aspects of Production of Bakery Products for Children’s and Adults’ Nutrition Enriched with Vitamin and Mineral Premixes, Malt Extract for Bakery and Flour Confectionery Products from Rye Flour, and Proper Labelling as a Tool to Increase Customer Loyalty and Promote Bread.
The Russian State Research Institute of Baking Industry is the only industry research centre in Russia that carries out complex fundamental and applied research work in the field of technology, biochemistry, microbiology, rheology and forecasting of bread baking industry development.
In 2020, the institute opened the Bread Baking Academy science and technology centre, an innovative technological platform for training and professional development of bread baking specialists.
