Meat boners showed a master class

At Agroprodmash 2022, with the support of the Gorbatov Federal Research Centre for Food Systems, EXPOCENTRE AO held a professional show for meat boners. This show has become a traditional event of the exhibition.

The aim of the show is to popularize and enhance the value of the working profession. A good meat boner is a unique and valuable employee for any meat processing company, as the quality of the finished product depends on the quality of the meat boner and also partly on cost reduction.  

This year, 11 meat boners from meat processing plants and companies took part in the show. They represented the Altai and Perm Krais, the Udmurt Republic and Kamchatka Krais, the Kurgan, Tambov and Tver Oblasts, Moscow and the Moscow Region. And this is the first time the Kamchatka and Altai Territories are taking part in the show.

Sergey Selivanov, First Deputy Director General of EXPOCENTRE AO, addressed the participants of the show with a welcoming speech.

The event was attended by Boris Gutnik, founder of the Meat Boners Show, a meat and dairy industry expert at the Gorbatov Federal Research Centre for Food Systems and member of the expert commission of the Russian Ministry of Agriculture on food quality.

"The deboning process has not changed over the entire period of the Show of the Best Professional Meat Boners," said Boris Gutnik. “But the organisation of the process itself has become more detailed and demanding. Today, a professional has to understand what his or her task is to produce a high quality product and how it can be achieved. The meat boner must know which piece of meat is crucial for which product. This applies to both pork and beef”. The current show was attended by meat processors from Yelizovsky Meat Processing Plant (Kamchatka), Meat Processing Plant REMIT (Moscow Region), Cherkizovo Group (Moscow), Kungursky Meat Processing Plant (Perm Territory), Altayskie Sausages (Altai Territory), Pavlovskaya Sloboda Meat Processing Plant (Moscow region), Tambovsky Bacon (Tambov), Meat Processing Plant Veles (Kurgan), MPZ Bogorodsky (Moscow region), Vostochny (Udmurt Republic) and Dmitrogorsky Processing Plant (Tver region).
