Agroprodmash 2019: Russia's bakery market made a breakthrough

The 4th Russian Forum on Bakery and Confectionery Industry “Bread Business 2019” ran at the Agroprodmash 2019 exhibition at Expocentre Fairgrounds. It was devoted to the analysis of the current state and prospects of the bakery industry.

The Forum organisers, Imperia KVK and Expocentre AO, drew up the programme taking into account 80 interviews preliminary conducted with representatives of the bakery and confectionery industries, as well as media content and industry associations. The programme included several key units. Each of them had presentations grouped by the most pressing issues of bakery, ingredients, and finished products supplies. The Forum brought together more than 300 participants. More than 20 experts made their presentations at the Forum, among them representatives of industry associations, industry research institutes, analysts, and equipment manufacturers.

They stated that over 25 years the Russian bakery market had made a great breakthrough in its development. Major enterprises have been upgraded. New trends have appeared. Small bakery business has started to separate itself. Production of baked goods goes into the hands of small businesses which produce them almost in each city district.

According to the industry experts, though this trend would hardly change the position of large-scale production in the near future, it deserves attention. After all large bakers will inevitably have to compete for small business customer. It will be necessary to divide the assortment of their products into segments. The main thing is to sell more fresh and 'healthy' bread.

For the first time the Forum featured the Bakery Battle between large bakeries and mini-bakeries. During the battle the participants discussed pros and cons of development of a relatively new trend for the market such as home-cooked bakery.
